  Professor Yong-Hui Hu from the Department of Hospitality Management, Southern Taiwan University of Science and Technology, won the special gold medal in the 11th International    2015/9/18    

 

Professor Yong-Hui Hu from the Department of Hospitality Management, Southern Taiwan
University of Science and Technology, won the special gold medal in the 11th International
Nutritious Cuisine Competition.

Upon the invitation of the International Institute for Learning Sciences industry, government and public health council recommendation, Professor Yong-Hui Hu from the Department of Hospitality Management, Southern Taiwan University of Science and Technology became the representative of Taiwan and participated in the 11th International Nutritious Cuisine Competition (Bodhi Cup). He won the special gold medal in the triathlon competition and offered the glory to our country, while his team with other school teachers also won the gold medal of the team competition. The competition has players from 11 countries, including Taiwan, Malaysia, Singapore, Japan, Spain, the Netherlands, Germany, United Kingdom, Australia, South Korea, China, etc. There were nearly 180 participants from more than 60 cities.

Prof. Yong-Hui Hu has had experience of more than 20 years in making vegetarian meals for senior citizens. In the competition, he made a golden soup bun with fresh mushrooms, carrots and other ingredients for the stuffing, with flour skin made of water lilies tied and sealed, topped with pumpkin sauce. They tasted fresh and not greasy at all. He also stuffed mushroom slices into places where there he used flowers and blooming petals to go with mushrooms, pine mushrooms and other ingredients. This dish combines several colors, smells, tastes and great creativity.

As a health food competition, the ingredients and finished products should be focused on health. The competition is subdivided into diet drug regimen, vegetarian health food, and fruit health food. Prof. Hu participated in the triathlon competition of higher education vegetarian regimen group, while he also participated in the group competition with other teachers from STUST. Prof. Hu said that as the competition was held in India, many of the ingredients were quite limited. The locals are in curry-based diet, so many ingredients must be raw materials taken from Taiwan to produce a sense of freshness.
