  The Department of Biotechnology and Food Technology of STUST realized the educational concept of "learning by doing, dong in learning," bringing warmth into cold knowledge    2021/8/17    

 

STUST, which upholds both practice and theory, demonstrated the educational philosophy of "learning by doing, dong in learning," so that biotechnology and food technology are no longer just a paper talk. Professor Bo-Ting Chen from the Department of Biotechnology and Food Technology verified the theory with practice. The cold knowledge in books is generated to bring students a deeper understanding of biotechnology and food technology. In terms of food technology, the technology of fermentation is linked with daily life through craft beer implementation, so that students can no longer feels difficult and difficult to understand the food fermentation technology.

Professor Chen led the students to hold and participate in brewed beer contests in order to accumulate practical experience and enhance industrial interaction. Two years ago, with the support of the school, the team released two beer brands—"FIGHTING" and "HIGH‧FIVE"—for the 50th anniversary of STUST, receiving a great number of responses. This year, Professor Chen led the students to start the development plan of the Kombucha fermented drink, which has become very popular in Europe and the United States. Unlike the ordinary production methods based on folk knowledge, Professor Chen led the students to carry out strain analysis, strain preservation, composition identification, etc., gradually establishing a scientific approach. The data and fermentation program helped students learn the development of fermented food and understand the importance of complementarity of knowledge and technology. The development results will surely become commercialized.


In terms of biotechnology, enzymes or proteins are the most widely used biotechnology products in the industry. The enzyme mass production evaluation platform developed by Professor Chen's R&D team integrated upstream, mid-and- downstream technologies to assist the industry in the development of a number of mass production processes for biotech products. The keratinase mass production process developed by the R&D team can achieve commercial mass production. On a large scale, because keratinase can hydrolyze hard-to-decompose feathers or hair into amino acids and small molecule peptides, it has unique applicability in the enzyme market and will develop into various products in cooperation with the industry in the future.

As Zhen-Chian Wang, Dean of the College of Engineering of STUST, pointed out, STUST can help students find their own way in the future, with its excellent team of teachers, high-quality R&D environment for innovation, and practical courses related to creativity and entrepreneurship.
