STUST adheres to the purpose of fulfilling the social responsibilities of the university and maintaining food safety in Tainan City. On September 13, the STUST held the 8th Southern Taiwan Food Safety at Niantsi International Conference Hall. This event invited Deputy Mayor Ching-hu Chao of Tainan City, Deputy Director Wen-zheng Huang of the Bureau of Health, Tainan City Government, representatives of food-related associations, and other distinguished guests. Acting President De-guang Chou of STUST, Vice President Zhen-chian Wang, and other school officials also attended the event. The aim was to gather opinions from industry, government and academia to reach consensus, coordinate with central policies, and cultivate self-management and food safety concepts in food businesses.

This forum was kicked off by speeches by Deputy Mayor Ching-hu Chao of the Tainan City and Acting President De-guang Chou of STUST. Vice Mayor Ching-hu Chao thanked experts and scholars from all walks of life for providing valuable opinions. The Food Safety Forum is an important platform for experience exchange among industry, government and academia, helps to form industry consensus. The city government team has also actively responded to food safety incidents, including the recent food poisoning incidents involving Sudanese red chili powder and Baolin Teahouse. They have invested timely investigation efforts to reduce and prevent the occurrence of food safety incidents in Tainan. The results of this forum will be an important basis for the city government to promote food safety and hygiene management, providing a solid theoretical foundation for food hygiene and safety in Tainan. In the future, the city government team will continue to strengthen and improve food safety promotion work, promote the effective implementation of food safety policies, reduce people's food safety risks, and ensure the health of consumers.

De-guang Chou, Acting President of STUST, particularly expressed his gratitude to the Tainan City Government. STUST has invested school resources and professional manpower to implement the food safety and hygiene management system plan for eight consecutive years. This year, it also held 14 food safety management publicity and briefing sessions, with a total of 1,121 food items. Business operators participated in calling 67 food safety counselors to 515 business premises of the business operators to implement self-management of food safety and ensure food safety in Tainan. In the future, STUST will continue to uphold the spirit of social responsibility and sustainable development, continue to assist the Tainan City Government in strengthening the independent management capabilities of food businesses, and jointly maintain food safety in the city.

The first topic discussed in the morning session was "Food Safety Autonomous Management Development Strategies." Emeritus Professor Ming-chang Wu from the Department of Food Science of the National Pingtung University of Science and Technology was invited to host the opening ceremony. Chi-hao Li, Section Chief of the Southern District Management Center of the Food and Drug Administration, the Ministry of Health and Welfare, and Zheng-yong Lai, Senior Environmental Technician from the Chemical Substances Management Administration of the Ministry of Environmental Protection were invited to discuss Taiwan's food additive management system and strategies to prevent the flow of non-food chemical substances from being used in food.
The first session in the afternoon, "Elimination of Illegal Additives and New Thinking on Sustainable Development," was opened by Jia-sheng Yeh, Chairman of the Chinese Food Safety Control System Development Association, followed by Associate Professor Zhi-gang Luo from the Department of Food Science, National Pingtung University of Science and Technology, who introduced the food supply chain tracking and tracing mechanism and its development strategy. Wen-shue Zhan, Associate Director of Dingshin Computer Co., Ltd., discussed how AI intelligence can be applied to food safety management.
The second session in the afternoon, "Sharing Strategies for Independent Management of Food Industry to Improve Brand Image", was opened by Da-wei Huang, Director of the Department of Biology and Food Technology of STUST, followed by Ming-chian Li, Manager of the Food Safety Center of Uni-President Enterprise Co., Ltd., and Shi-wei Chen, Associate Manager of Heichiao Enterprise Co., Ltd., and Wei-chian Huang, Deputy Director of Guaguayuan Enterprise Co., Ltd., shared their experience in independent management strategies for food companies to enhance their brand image.
The Food Safety Forum has formed consensus from the different opinions of experts and scholars. It will become an important pillar for the government to promote food safety and hygiene management. The collaborative research results and experience gained from industry, government, academia and research are not only an important reference for government policy, but also a theoretical basis for promoting food hygiene and safety in Taiwan.
